Mark Birchall, Roux Scholarship Winner 2011 announces his stage

Mark Birchall, Head Chef at Simon Rogan’s Michellin starred L’Enclume restaurant in Cumbria is the 28th winner of the prestigious Roux Scholarship, has announced he wants to spend his stage at family run El Celler de Can Roca, voted number two in this years S.Pellegrino Worlds Best 50 Restaurants.
As part of Mark's prize package as winner of the prestigious Roux Scholarship, he was offered the choice of work at any Michelin starred restaurant around the world.
Mark says, ‘I chose it because the three brothers use unusual techniques but they still respect traditions and produce. It is a great opportunity for me to learn and develop my skills’.
